Caldera has honest, creative and playful recipes at the core of the brand, pushing the boundaries and stereotypes associated with Mexican cuisine, some using centuries-old methods of cooking. Our mole rojo is homemade on a volcanic metate over 10 hours and using 19 ingredients. The labour of love behind each dish is reflected in the taste and presentation, putting a spotlight on the less familiar Mexican enogastronomy of local and regional communities, and identities.
